Crack Hot Potatoes

12 Small whole round (preferably new) potatoes
3 Tablespoons Olive Oil
Kosher Salt (To Taste)
Black Pepper (To Taste)
Rosemary (To Taste)


Bring a pot of water to a boil. (Salt water to get that rapid/hot boil)
Add in as many potatoes as you need
Cook them until they are fork-tender

Drizzle Olive Oil on a Sheet Pan
Place the soft-boiled potatoes on the cookie sheet
Leave “cracking” room between each potato

Grab a potato masher and gently press down each potato until they crack down
Make sure all sides of the potato are cracked down

Brush the tops of each crushed potato with olive oil then sprinkle them with salt and pepper
Sprinkle with rosemary

Bake at 450 degrees for 20 minutes or until golden brown.
